Best Lemon Meringue Pie Recipe …seriously

Chef Buck here and today mama redbuck is making lemon meringue pie is that the greatest meringue ever? I hope so. so after the crust is baked and ready add a cup of sugar into a sauce pot then add half a cup of cornstarch 1/4 teaspoon of salt zest two lemons add the zest in with the sugar and cornstarch get 3 Tbsp of butter ready take 4 eggs and separate the whites from the yolks now you have 4 egg whites and 4 egg yolks beat egg yolks and set aside Prepare the lemons already zested by slicing and juicing them fresh lemon juice is best, but use bottled juice if you like juice lemons to make 1/2 a cup catch the seeds with a strainer now add 2 1/4 cup of water to your sugar/cornstarch pot stir in and mix well continuously stir on medium heat until the mixture thickens and begins to boil this is the worst part of making the pie, because you have to stir continuously about 20 minutes for the filling to thicken this is the best lemon pie you will ever have stir 20 minutes….maybe a few minutes longer or a few minutes less been stirring about 19 minutes it’s ready….the cornstarch has thickened and the mixture is beginning to bubble now slowly add a little of the mixture to the egg yolks while whisking…just a add a little at a time be careful not to overheat the yolk and cook the egg now add the yolk mixture to the sauce pot heat the pot up again to a bubble on medium heat remove from the heat and add the butter and lemon juice stir until the butter has melted now pour the filling into the pie crust the filling filled up a 9 inch deep dish crust now we’ll make the meringue, but first we’ll make something to add to the meringue in a sauce pan add a little sugar and cornstarch place pan on medium heat and stir in water it’ll only take a few minutes the mixture will start milky white but clear slightly stir until slightly thickened, but not too thick then set pan aside to cool now beat the egg whites a moment to make frothy ad a smidgen of salt and some vanilla extract now add 4 tbsp of sugar …but just 1 tbsp at a time, mixing as you add each spoonful to incorporate slowly now we’re starting to see a few soft peaks so now we’ll add our cooled down cornstarch/sugar paste into the mix whisk it in until the peaks stiffen and stand….you can tell by looking, and also by the “feel” grab a spatula and spread the meringue evenly over the pie filling it’s a lot of meringue and will make a high pie! cover the pie well, and evenly chop chop on top to make peaks on the pie leave pie on a pan and place in an oven preheated to 400 degrees Fahrenheit take a look at the pie…we’ll turn and bake a few more minutes let’s take a look this is 13 minutes baking all together, but time will vary according to your oven how long does it have to sit before we slice it? let it cool…don’t cut when it’s warm…let it rest a few hours don’t wrap the pie or it’ll pull off the meringue…use a dome to store the pie even though it’s been in the fridge for a day, the meringue looks great the 1st slice is hard to cut and look pretty……. but I didn’t mess it up too bad there’s no water in our pie tin I love this pie!….it’s really good! it’s not too sweet but it’s sweet enough you can print the entire recipe at MyFoodChannel dot com

    I love her! She sounds like me when my kids are bothering me. Her son is super annoying in that video even if he is funny. He would most likely gotten a rubber spatula to the side of the head if he was one of my teenagers. Damn kids always make off with the mixer parts and bowl especially if I tell them they can't. Chocolate cake batter- run with the bowl. I find them hiding in the shower with it all over their faces when they were younger. Now they just wait until I turn for a split second and it's gone. Daniel was famous for that. Damn kid could lick a bowl clean faster than the dogs. Since he's twenty one I don't think all the raw eggs messed him I too badly. 🤣

    I made this pie exactly as you explained. The video was so helpful. I had never made a lemon meringue pie before. I did wonder how long and hot to cook the meringue once it was on the pie. I did 350 for 11 min. Seemed golden to me. I haven't tasted the complete pie yet, but that custard was delicious! Thank you!

Just keep doing that! I'm nearly 70 and when I'm gone, that's the end of the line, except for my 2 single daughters. So, always keep her memory and her pie in your heart. You're a good man.

    Of all the lemon pies recipes I have seen, this has to be the best one. Especially for the meringue where adding a corn starch mixture, makes the meringue thick and firm. I believe that this is the secret to making a meringue that you could only find in most restaurants. I was looking for that secret ingredient for a long time and I think that I've found it. That lady makes a better lemon pie than a lot of pastry chef. Awesome!

    Where are the nodules of nectar? Guess my Mothers wins out, once you make hers and let it sit in fridge overnight the lemon rises through the meringue and there are hundreds of golden drops all over the top of the meringue, pure lemon goodness.,,, This is a solid 2nd.

    I made my first Lemon Meringue Pie using your grandma's recipe. It came out great! I am going to do another for a pot luck dinner tonight to impress my friends! fyi: Pricking holes in the pie crust prior to blind bake (pre-baking) is called 'docking' and adding a bit of the warm lemon mixture to the egg is called 'tempering'.     I made this pie yesterday and my gosh is it delicious and came out picture perfect. Prep is the key. Zest your lemon, bake the crust,separate the yolk and whites, get your sugar measured out and bam…it was easy peasy. Thanks for sharing. Will be making this again for sure. So delicious. Oh and I used fresh lemons, used 4 lemons for the 1/2cup juice and 3 for the zest.

    My husband and father in law asked me to make lemon meringue pie for the upcoming Father's Day holiday! So I was in search of a recipe! I found this one! It was so fun to watch and Meemaw is the cutest! I looked no further and decided to give with this one. Last week, I did a test run! All I can say is, WOW! It was easy and so much better than store bought or even better than Marie Callender's!!! I personally do not like lemon meringue because it is cloyingly sweet and puckery sour! This pie was a perfect balance of sweet and sour! I couldn't get over how much I loved it!! But the true test is my hubby and son. They loved it! This was evident by how two people could polish off a pie in two days!! I highly recommend this pie. It is easy and oh so good!!!

    I can recall mom making pies, as you did but she made 4 or 5 of them every day, One for each of us, an they'd be gone by bed time, an the next day we'd have a different pie,
    I miss my mom's cooking, Today you just don't get that real baking mom's learned how to do, They use to much garbage including canola oil which takes away from the taste an enjoyment of a real mom's cooking,

    I woke up from an amazing dream about a pie contest i would run in my little pie n coffe cafe in New York City… I would buy pies from the ladies in the community who needed some extra cash to live on.. I would buy their pies and sell them by the slice or whole… And i got to taste all of these amazing pies in my dream! Helped out my community and i also had a good many adopted kids who i raised n they liked working at the Cafe.
    So i woke up n found your lemon meringue video as this was one of my favorites in my dream!
    Except im not quite sure is i was a black woman or a white woman in my dream… It did show me as a black grandma type… Or she was my competition!😄… I also had 4 boobs in my dream… (It was comic relief but i think that symbolized a nurturing element)

    This is an amazing pie. Some additional tips to avoid the "sweating" that causes the pooling. Don't add the sugar to the meringue until it's a bit coarse (thickening) and don't wait too long to add the cornstarch. That will bind the elements and help keep it from shrinking very much (even humidity will shrink the meringue). It's a good idea to not put the dome (cover) on right away. Let the pie cool a bit to avoid condensation and sweating. In general you want to let it cool off a bit before putting it in the fridge and it also helps to apply the meringue while the lemon base is still hot. This way heat escapes through the meringue to avoid the sweating. I have to go that extra step because I'm not magic in the kitchen the way meemaw here is. Bon Appetit everyone!

    of all the lemon meringue pies on the internet I chose this one all because of this wonderful lady I LOVE HER!…and I also will use her "cornstarch secret" for other pies! this is a fabulous recipe all you really have to buy is the pie crust, unless you make your own, which I will not do, everything else you probably have at home its really that simple! thank you for this, I will be making this, I cant wait…THANK YOU!
